Prepare the steak and shrimp:
Season the steak slices with salt and pepper.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the steak and stir-fry for 2-3 minutes, or until browned and cooked through. Remove from the skillet and set aside.

Combine the stir-fry:
Return the cooked steak and shrimp to the skillet with the vegetables. Add the cooked noodles and toss to combine.
Pour in the soy sauce, oyster sauce, hoisin sauce, and red pepper flakes (if using). Stir everything together until the noodles are well-coated and heated through.
Serve:
Once everything is well-mixed and heated through, remove the skillet from the heat. Garnish with fresh cilantro and serve with lime wedges on the side for a zesty kick.
