Heat 1 tablespoon of olive oil in a large skillet or frying pan over medium heat.
Add the sausages to the pan and cook for about 5-7 minutes, turning occasionally, until they are browned on all sides.
Once the sausages are browned, remove them from the skillet and set aside.
Step 2: Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil.
Add the sliced onions and bell peppers to the pan. Sauté for 8-10 minutes, stirring occasionally, until the vegetables become soft and start to caramelize.
Add the minced garlic, oregano, basil, red pepper flakes (if using), salt, and pepper. Stir to combine and cook for another 1-2 minutes, allowing the garlic to become fragrant.
Step 3: Combine and Cook
Slice the cooked sausages into 2-inch pieces or leave them whole if you prefer.
Return the sausages to the skillet with the peppers and onions.
Add the chicken broth or water to the pan to deglaze, scraping up any bits stuck to the bottom. Cover and cook for another 5-7 minutes, allowing the flavors to meld together and the sausages to cook through.
Step 4: Serve
Once everything is cooked through and sizzling, transfer the sausage, peppers, and onions to a serving platter.
Garnish with freshly chopped parsley before serving.
