Preheat your grill to medium-high heat. Clean and oil the grill grates to prevent the oysters from sticking.
Step 2: Prepare the Oysters
Using a shucking knife, carefully open the oysters, being sure to keep the oyster inside the shell intact. Discard any shell fragments, and place the oysters on a baking sheet or in their shells if you’re grilling them directly.
If grilling on the half shell, remove the oysters from the top shell but leave them in the bottom shell for grilling.
Step 3: Make the Creole Butter Sauce
In a small bowl, mix together the melted butter, Creole seasoning, garlic powder, smoked paprika, lemon zest, parsley, lemon juice, and hot sauce (if using). Stir until well combined.
Step 4: Grill the Oysters
Brush the oysters with a little olive oil to prevent sticking.
Place the oysters on the grill, directly on the grates or in a grill-safe pan. Close the lid and grill for about 4-5 minutes, or until the oysters start to open slightly and become opaque.
Once the oysters are ready, spoon the Creole butter sauce over each oyster, ensuring it’s evenly coated. Close the lid and grill for an additional 2-3 minutes, until the butter is sizzling and bubbly.
Step 5: Serve and Garnish
Carefully remove the oysters from the grill and place them on a serving platter.
Garnish with fresh parsley and lemon wedges. Serve immediately with extra hot sauce on the side, if desired.
