In a medium pot, place the eggs and cover with water. Bring to a boil over medium-high heat.
Once the water is boiling, cover the pot, remove it from the heat, and let the eggs sit for 10-12 minutes.
After the eggs are done, transfer them to a bowl of ice water to cool, or run them under cold water for a few minutes.
Step 2: Prepare the Filling
Peel the eggs and cut them in half lengthwise. Remove the yolks and place them in a bowl.
Mash the yolks with a fork until smooth.
Add the mayonnaise, Dijon mustard, chopped green onions, pickle relish, smoked paprika, salt, and pepper to the mashed yolks. Mix until well combined and creamy.
Step 3: Fill the Egg Whites
Spoon or pipe the filling into the egg whites.
Sprinkle with extra smoked paprika for garnish, if desired.
