Seared Scallops in Creamy Garlic Sauce

Pat the scallops dry with paper towels. Season both sides with salt and pepper. It’s important that the scallops are dry to get a good sear.

2️⃣ Sear to Golden Perfection:

Heat olive oil in a skillet over medium-high heat.

Add the scallops in a single layer and sear for 2–3 minutes per side until they develop a golden-brown crust.

Remove from the skillet and set aside.

3️⃣ Make the Creamy Garlic Sauce:

In the same skillet, reduce heat to medium and melt the butter.

Add the minced garlic and sauté for 30 seconds until fragrant.

Stir in broth, heavy cream, smoked paprika, and chili flakes (if using). Let it simmer for 3–4 minutes, until the sauce thickens slightly.

4️⃣ Return Scallops to Pan:

Gently return the seared scallops to the pan. Spoon the creamy sauce over the scallops and let them simmer for 1 minute to heat through and absorb the sauce’s flavors.

5️⃣ Finish & Serve:

Squeeze the juice of half a lemon over the scallops.

Garnish with chopped parsley or cilantro.

Serve hot with your favorite side dishes, such as mashed potatoes, rice, or a simple green salad.
