Savory Stuffed Chicken with Asiago and Roasted Peppers: A Flavor-Packed Delight

Preheat your oven to 375°F (190°C).
Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound them gently with a meat mallet until they are an even thickness (about 1/2 inch thick). This helps them cook evenly and makes room for the stuffing.
Season the chicken on both sides with salt, pepper, garlic powder, onion powder, and dried oregano.
Step 2: Prepare the Filling
In a medium bowl, combine the grated Asiago cheese, chopped roasted red peppers, fresh basil, and cream cheese (if using). Stir until the ingredients are well mixed and creamy.
Taste the filling and adjust seasoning with salt and pepper if needed.
Step 3: Stuff the Chicken
Place a generous amount of the Asiago and roasted pepper mixture in the center of each chicken breast.
Carefully fold the chicken over the filling, securing the edges with toothpicks or by tucking them under to close. Be sure the stuffing is well sealed inside.
Step 4: Sear and Bake the Chicken
Heat olive oil in a large oven-safe skillet over medium-high heat.
Once the oil is hot, add the stuffed chicken breasts and sear for 3-4 minutes on each side, until golden brown.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the juices run clear.
Remove the chicken from the oven and let it rest for 5 minutes before serving.
Step 5: Serve
Slice the stuffed chicken and arrange it on a serving platter.
Garnish with freshly chopped basil or parsley and extra roasted pepper slices for added color and flavor.
