Savory Spinach & Feta Egg Muffins

Preheat your oven to 350°F (175°C). Lightly spray a muffin tin with olive oil to prevent the muffins from sticking.

Make the Egg Mixture:

In a medium-sized bowl, crack the eggs and whisk them together. Add the milk, salt, black pepper, garlic powder (if using), and red pepper flakes (if using). Whisk until everything is fully combined.

Add the Spinach and Feta:

Stir in the chopped spinach and crumbled feta cheese. Mix well to ensure the spinach and feta are evenly distributed in the egg mixture.

Fill the Muffin Tin:

Pour the egg mixture into the muffin tin, filling each muffin cup about ¾ of the way full.

Bake:

Place the muffin tin in the oven and bake for 18-20 minutes, or until the muffins are set and slightly golden on top.

Serve:

Let the muffins cool for a few minutes before removing them from the tin. Serve warm or store them in an airtight container for up to 4 days.
