Roasted Zucchini with Garlic and Italian Herbs: The Easiest Dinner Side

Preheat your oven to 400°F (200°C). Cut the zucchinis in half lengthwise and scoop out the seeds if desired (optional). Place the zucchini halves on a baking sheet lined with baking paper.

Season the Zucchini:
Sprinkle salt, minced garlic, and Italian herbs over the zucchini halves. Drizzle with olive oil to enhance the flavor and help the zucchini roast evenly.

Roast:
Place the baking sheet in the oven and roast for 20-25 minutes, or until the zucchini is golden and tender, with slightly crispy edges.
