Roast the Vegetables:
Spread the seasoned vegetables in a single layer on the baking sheet. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the vegetables are tender and slightly crispy around the edges.
Add Finishing Touches:
If using, sprinkle the roasted vegetables with grated Parmesan cheese immediately after removing them from the oven. Serve with a squeeze of fresh lemon juice for added brightness.
