Rich Smothered Chicken Served on a Bed of Rice: A Comfort Food Delight

Season the chicken breasts or thighs with salt, pepper, smoked paprika, thyme, and oregano on both sides.
Step 2: Brown the Chicken

Heat the olive oil in a large skillet or pan over medium heat. Add the seasoned chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Step 3: Sauté the Vegetables

In the same skillet, add the chopped onion and cook for 3-4 minutes, until softened and translucent. Add the minced garlic and cook for an additional 1 minute until fragrant.
Step 4: Make the Smothered Sauce

Stir in the chicken broth, Dijon mustard, and heavy cream. If you’d like a thicker sauce, sprinkle in 1 tablespoon of flour and stir until the sauce thickens, about 2-3 minutes. Season with salt and pepper to taste.
Step 5: Return Chicken to the Skillet

Place the browned chicken back into the skillet, spoon some of the sauce over the chicken, and cover. Let it simmer on low heat for 5-10 minutes, allowing the chicken to soak up the flavors and remain tender.
Step 6: Serve the Chicken

Place a bed of cooked rice on each plate. Top with the smothered chicken and spoon extra sauce over the top. Garnish with fresh parsley or thyme for added flavor and color.
