Season the ribeyes generously with salt and pepper on both sides.
Let the steaks sit at room temperature for about 15 minutes before cooking. This helps them cook more evenly.
Step 2: Cook the Ribeye Steaks
Heat 1 tablespoon of olive oil in a skillet over medium-high heat.
Once the oil is hot, add the ribeye steaks and cook them to your preferred doneness (about 4-5 minutes per side for medium-rare, depending on the thickness of the steak).
Remove the steaks from the skillet and set them aside to rest.
Step 3: Caramelize the Onions and Mushrooms
In the same skillet, reduce the heat to medium. Add 1 tablespoon of olive oil and 2 tablespoons of butter.
Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until they become soft and caramelized, about 15-20 minutes. Add the sugar and balsamic vinegar during the last 5 minutes of cooking to deepen the flavor of the onions.
Add the sliced mushrooms and minced garlic, and cook for another 5-7 minutes until the mushrooms are tender and browned.
Step 4: Combine and Serve
Place the cooked steaks on plates and top them with the caramelized onions and mushrooms.
Garnish with fresh thyme or parsley for a burst of color and added flavor.
