Ribeye Steak Bites and Cheesy Smashed Potatoes: A Flavor-Packed Comfort Meal

In a large pot, bring the potatoes and salted water to a boil. Cook the potatoes for about 15-20 minutes, or until they are fork-tender. Drain the potatoes and return them to the pot.
Gently smash the potatoes with a potato masher or fork, leaving some chunks for texture.
Add the cream cheese, sour cream, butter, cheddar cheese, and Parmesan cheese. Mash until creamy and combined. Season with salt and pepper to taste. Keep warm.
Cook the Ribeye Steak Bites:

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the cubed ribeye steak in a single layer, ensuring not to overcrowd the pan. Cook for 2-3 minutes on each side until the steak bites are seared to your desired level of doneness.
Reduce the heat to medium, add butter, minced garlic, and fresh thyme or rosemary (if using). Stir the steak bites to coat them in the garlic-butter mixture and cook for another minute or two.
If desired, add soy sauce for extra flavor, stirring to combine.
Assemble and Serve:

Spoon the cheesy smashed potatoes onto plates, and top with the savory ribeye steak bites. Garnish with chopped green onions or parsley for a fresh touch.
Serve hot and enjoy the rich, comforting flavors of this indulgent dish.
