Refreshing Lime Mousse Cheesecake

Preheat the oven to 350°F (175°C).
In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
Press the mixture firmly into the bottom of a 9-inch springform pan.
Bake for 8-10 minutes until golden brown. Let it cool completely before adding the filling.
Step 2: Make the Cheesecake Filling

In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.
Add vanilla extract, lime zest, and lime juice, and mix until fully combined.

Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
Refrigerate for at least 4 hours or overnight until set.
Step 3: Prepare the Lime Mousse Topping

In a mixing bowl, whip the heavy cream and powdered sugar until soft peaks form.
Add lime zest and lime juice, then continue whipping until stiff peaks form.
Gently spread or pipe the lime mousse over the top of the cheesecake.
Step 4: Serve

Garnish with extra lime zest or thin lime slices for a refreshing look.
