Quick Breakfast Tortilla Wraps with Sausage and Eggs

Heat a pan over medium heat and add a little butter.

Cook the sausages for about 3-4 minutes per side, until browned and cooked through. Once cooked, remove from the pan and slice them into small pieces.

Prepare the Eggs:

In the same pan, add a little more butter if needed and crack the eggs into the pan.

Season with salt, black pepper, and the Italian herb mixture. Scramble the eggs as they cook, stirring frequently until they are fully cooked to your liking.

Assemble the Wraps:

While the eggs are cooking, warm the tortillas in a separate pan for 30 seconds on each side or in the microwave for a few seconds.

Once the eggs are done, remove them from the pan and set aside.

Place the warm tortillas on a plate, then spoon the scrambled eggs and sausage mixture into the center of each tortilla.

Add Toppings:

Top each tortilla with diced tomato and a sprinkle of fresh parsley.

Wrap and Serve:

Fold the sides of the tortilla inwards and roll it up into a wrap.

Serve immediately and enjoy your quick, delicious breakfast!
