Quick and Easy Potato Egg Delight

Peel and grate the potatoes into thin strips or small cubes. You can also use a food processor for quicker results.

Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.

Cook the Onion:

Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.

Add the chopped onion and sauté for 2-3 minutes until softened and translucent.

Mix the Ingredients:

In a large mixing bowl, whisk together the 3 eggs. Add the grated potatoes, sautéed onions, paprika, salt, pepper, and flour. Stir until all the ingredients are evenly mixed.

Fry the Dish:

Heat the remaining 1 tablespoon of vegetable oil in the skillet over medium-high heat.

Pour the potato-egg mixture into the skillet, spreading it evenly. Press the mixture down slightly with a spatula.

Cook for about 4-5 minutes on each side, until golden brown and crispy. If the dish is thick, you can flip it carefully in sections to ensure it cooks through.

Serve:

Once cooked, transfer the dish to a plate and sprinkle with freshly chopped parsley for a fresh burst of flavor.
