Pumpkin and Apple Oatmeal Bake: A Cozy Fall Breakfast Delight

Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or similar-sized casserole dish with non-stick spray or a bit of melted butter.
Mix Wet Ingredients:

In a large bowl, whisk together the milk, pumpkin, maple syrup, egg, melted coconut oil or butter, and vanilla extract until fully combined.
Add Dry Ingredients:

Stir in the oats, cinnamon, nutmeg, ginger, baking powder, and salt. Mix until the oats are evenly coated with the wet ingredients.
Add Apples and Nuts:

Gently fold in the chopped apple pieces and optional nuts (if using). This will ensure the apples are evenly distributed throughout the mixture.
Bake the Oatmeal:

Pour the oatmeal mixture into the prepared baking dish. Spread it out evenly and press down gently to compact the mixture slightly.
Bake for 30-40 minutes, or until the top is golden brown and a knife inserted into the center comes out clean. The oatmeal should be set and slightly firm to the touch.
Serve:

Allow the oatmeal bake to cool for 5-10 minutes before slicing. Serve warm with a drizzle of maple syrup or a dollop of yogurt for extra richness.
