Pumpkin and Apple Oatmeal Bake: A Cozy Fall Breakfast Delight

Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish or similar-sized casserole dish with non-stick spray or a bit of melted butter.
Mix Wet Ingredients:

In a large bowl, whisk together the milk, pumpkin, maple syrup, egg, melted coconut oil or butter, and vanilla extract until fully combined.
Add Dry Ingredients:

Stir in the oats, cinnamon, nutmeg, ginger, baking powder, and salt. Mix until the oats are evenly coated with the wet ingredients.
Add Apples and Nuts:

Gently fold in the chopped apple pieces and optional nuts (if using). This will ensure the apples are evenly distributed throughout the mixture.
Bake the Oatmeal:

Pour the oatmeal mixture into the prepared baking dish. Spread it out evenly and press down gently to compact the mixture slightly.
