“Potatoes and Eggs Delight: The Quick, Delicious Dish You’ll Want Every Day!”

Prepare the Potatoes:
Peel and dice the potatoes into small cubes. Place them in a pot of water and bring it to a boil. Let them cook for about 10-15 minutes, or until they are fork-tender. Drain and set aside.

Cook the Eggs:
While the potatoes are cooking, boil the eggs. Add the eggs to a pot of water and bring it to a boil. Once boiling, reduce the heat and let them simmer for about 10 minutes. Afterward, peel and chop them into small pieces.

Sauté the Vegetables:
Heat a tablespoon of oil in a pan over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Then, add the minced garlic and grated carrot, and sauté for another 2 minutes until fragrant and tender.

Combine Everything:
In a large mixing bowl, combine the cooked potatoes, sautéed vegetables, and chopped boiled eggs. Add the tablespoon of mayonnaise and mix well to coat everything evenly.

Season and Serve:
Season with salt and pepper to taste. Stir everything together until well-mixed, and serve warm.
