Peel and grate the potatoes using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out the excess moisture. This will help the fritters become crispier.
2. Mix the Ingredients:
In a large bowl, combine the grated potatoes with flour, cheese (if using), green onions or parsley, beaten egg, salt, pepper, and garlic powder. Stir everything together until the mixture holds together. If the mixture seems too loose, you can add a little more flour to bind it.
3. Fry the Fritters:
Heat vegetable oil in a large frying pan or skillet over medium-high heat. To test if the oil is ready, drop a small spoonful of the potato mixture into the oil. If it sizzles, it’s hot enough.
Scoop out spoonfuls of the potato mixture and carefully place them in the hot oil. Flatten them slightly with the back of a spoon to form fritters.
Fry for about 3-4 minutes per side, or until golden brown and crispy. Avoid overcrowding the pan to ensure even cooking.
4. Drain and Serve:
Once the fritters are golden and crispy, remove them from the oil and drain them on a paper towel-lined plate to absorb any excess oil.
Serve hot with a dipping sauce like sour cream, ketchup, or your favorite sauce.
