Potato & Beef Casserole: A Hearty Comfort Food Delight

Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish with a bit of butter or cooking spray.

Cook the Ground Beef:
In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, cooking for about 2 minutes until softened. Add the ground beef and cook until browned, breaking it apart with a spatula. Season with oregano, paprika, salt, and pepper. Once the beef is fully cooked, remove from heat and set aside.

Prepare the Potato Layers:
Slice the potatoes into thin, even rounds. In a separate bowl, whisk together the sour cream, milk, and a pinch of salt and pepper.

Assemble the Casserole:
Layer the bottom of the greased casserole dish with half of the sliced potatoes. Spread half of the cooked ground beef mixture on top of the potatoes. Pour half of the sour cream mixture over the beef. Repeat the layers with the remaining potatoes, beef, and sour cream mixture. Pour the beef broth over the top.

Bake the Casserole:
Cover the casserole dish with aluminum foil and bake for 40 minutes. After 40 minutes, remove the foil and sprinkle the shredded cheddar cheese over the top. Continue baking uncovered for an additional 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.

Serve:
Let the casserole cool for a few minutes before serving. Garnish with chopped fresh parsley for a touch of color and freshness.
