Potato and Bacon Soup

In a large pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes.
Remove the bacon from the pot and set aside, leaving the bacon grease in the pot.
Step 2: Sauté the Vegetables
Add the diced onion to the pot and sauté in the bacon grease until softened, about 4-5 minutes.
Add the minced garlic and cook for another 1 minute until fragrant.
Step 3: Cook the Potatoes
Add the diced potatoes to the pot with the onions and garlic. Stir to combine.
Pour in the chicken broth, and season with salt, pepper, and thyme.
Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
Step 4: Blend the Soup
Once the potatoes are tender, use an immersion blender to blend the soup until it reaches your desired level of smoothness. You can also blend part of the soup for a thicker consistency, leaving some chunks for texture.
Step 5: Add Cream and Bacon
Stir in the heavy cream and milk, and heat the soup through.
Add the cooked bacon back into the pot and stir to combine.
Step 6: Serve and Garnish
Taste and adjust seasoning with more salt and pepper if needed.
Ladle the soup into bowls and top with shredded cheddar cheese and fresh parsley, if desired.
