Poor Man’s Prime Rib: A Flavorful Feast Without the Price Tag

Preheat the Oven: Preheat your oven to 350°F (175°C).
Prepare the Seasoning: In a small bowl, mix together the minced garlic, rosemary, thyme, salt, pepper, onion powder, garlic powder, and smoked paprika.
Sear the Roast: Heat the olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides for 2-3 minutes per side, until it’s browned and caramelized. This step helps to lock in the flavor.
Season the Roast: After searing, rub the seasoning mixture all over the roast, ensuring it’s well-coated.
Roast the Beef: Place the seasoned roast on a roasting rack in a roasting pan. Pour the beef broth into the bottom of the pan, then place the pan in the oven. Roast for about 1 ½ to 2 hours, or until the roast reaches your desired level of doneness. Use a meat thermometer to check the temperature (for medium-rare, aim for 130°F).
Rest the Roast: Once the roast is done, remove it from the oven and let it rest, covered loosely with foil, for 10-15 minutes. This allows the juices to redistribute and ensures a juicy roast.
Serve: After resting, slice the roast against the grain and serve with your favorite sides like mashed potatoes, roasted vegetables, or a fresh salad. Optionally, spread a little softened butter on each slice for added richness.
