Pistachio Dreams Cheesecake: A Creamy, Nutty Delight

Preheat your oven to 325°F (163°C).
In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined.
Press the mixture into the bottom of a 9-inch springform pan to form an even crust.
Bake for 8-10 minutes, or until lightly golden. Let it cool while you prepare the filling.
Step 2: Make the Pistachio Cheesecake Filling
In a large bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
Add the vanilla extract and beat until fully incorporated.
Add the eggs, one at a time, beating well after each addition.
Stir in the heavy cream, ground pistachios, and pistachio pudding mix until the mixture is smooth and well combined.
Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.
Step 3: Bake the Cheesecake
Bake the cheesecake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
Turn off the oven, crack the oven door, and let the cheesecake cool for about 1 hour.
Refrigerate the cheesecake for at least 4 hours, or overnight, to allow it to set completely.
Step 4: Garnish and Serve
Before serving, sprinkle the top of the cheesecake with crushed pistachios and add a dollop of whipped cream if desired.
Slice and serve chilled for a perfect finish to your meal.
