Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking dish with parchment paper.
Prepare the Crust:
In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until everything is well coated.
Press the mixture evenly into the bottom of the prepared baking dish. Bake for 8-10 minutes, or until the crust is golden brown. Remove from the oven and set aside to cool slightly.
Make the Filling:
In a large bowl, whisk together the sugar, flour, eggs, lemon juice, and lemon zest until smooth.
Stir in the drained crushed pineapple until fully incorporated. Pour the mixture over the cooled crust.
Bake the Bars:
Bake for 25-30 minutes, or until the filling is set and lightly golden on top. The center should no longer jiggle when you gently shake the pan.
Prepare the Topping:
While the bars are baking, whisk together the powdered sugar and fresh lemon juice to make a smooth glaze.
Once the bars are done baking, remove them from the oven and allow them to cool completely in the pan.
Finish and Serve:
Once the bars have cooled, drizzle the lemon glaze over the top. Cut into squares and serve chilled or at room temperature.
