Pineapple Cowboy Candy: A Sweet and Spicy Twist on a Classic

Start by peeling, coring, and slicing the pineapple into rings or chunks. Set aside.
Prepare the Syrup:

In a medium saucepan, combine the apple cider vinegar, granulated sugar, brown sugar, water, ginger, cinnamon, allspice, turmeric (if using), cayenne pepper (if using), and salt. Stir until the sugar has dissolved.
Simmer the Syrup:

Bring the syrup mixture to a simmer over medium heat, stirring occasionally. Let it simmer for about 5 minutes to allow the spices to infuse and the syrup to thicken slightly.
Add the Pineapple and Jalapeños:

Add the pineapple slices or chunks and sliced jalapeños into the saucepan. Stir gently to coat them with the syrup. Reduce the heat to low and simmer for 20-25 minutes, or until the pineapple is tender and the syrup has thickened.
Cool and Store:

Remove the saucepan from the heat and let the Pineapple Cowboy Candy cool in the syrup. Once cooled, transfer the pineapple and syrup into a clean jar or airtight container.
Serve:
