Philly Steak Cheese Fries: A Hearty Twist on Classic Fries

Preheat your oven to 425°F (220°C).
Toss the cut potatoes in olive oil and season with salt and pepper.
Spread the fries in a single layer on a baking sheet lined with parchment paper and bake for 25-30 minutes, flipping halfway through, until crispy and golden brown.
Cook the Steak and Veggies:

While the fries are baking, heat a large skillet over medium-high heat and add the butter.
Once the butter is melted, add the sliced onions and bell peppers. Cook for about 5 minutes, stirring occasionally, until softened and slightly caramelized.
Add the thinly sliced steak to the skillet and cook for another 5-7 minutes, until the steak is browned and cooked through.

Assemble the Cheese Fries:

Once the fries are crispy and golden, remove them from the oven and transfer them to a serving plate or dish.
Spoon the cooked Philly steak and veggie mixture evenly over the fries.
Sprinkle the shredded provolone and cheddar cheese over the steak and fries.
Return the dish to the oven for 2-3 minutes, just until the cheese is melted and bubbly.
