Perfectly Seared Steak with Parmesan Mashed Potatoes and Crispy Chips: A Deliciously Elegant Meal

Let the steaks rest at room temperature for about 30 minutes before cooking. This ensures an even sear.
Season both sides of the steaks generously with salt and black pepper.
Heat olive oil in a heavy skillet (preferably cast iron) over medium-high heat. Once hot, add the steaks.
Sear the steaks for about 3-4 minutes on each side, or until a golden-brown crust forms.
Add butter, garlic, and herbs to the pan, then tilt the pan and spoon the melted butter over the steaks for another minute to enhance the flavor.
Remove the steaks from the pan and let them rest for 5 minutes before serving to allow the juices to redistribute.
Make the Parmesan Mashed Potatoes:

In a large pot, bring salted water to a boil and add the cubed potatoes. Cook for 15-20 minutes or until the potatoes are fork-tender.
Drain the potatoes and return them to the pot.
Add the butter and heavy cream, and mash the potatoes until smooth and creamy.
Stir in the grated Parmesan cheese, garlic powder (if using), salt, and pepper. Taste and adjust the seasoning as needed.
Garnish with chopped fresh chives before serving.
Make the Crispy Chips:

Preheat the oven to 400°F (200°C).
Thinly slice the potatoes using a mandolin or sharp knife.
Place the potato slices in a bowl of cold water for 10 minutes to remove excess starch. Drain and pat dry with a paper towel.
Toss the potato slices in olive oil, salt, and paprika until evenly coated.
Spread the slices in a single layer on a baking sheet lined with parchment paper. Bake for 15-20 minutes, flipping halfway through, until golden and crispy.
Garnish with freshly chopped parsley.
Serve:

Serve the perfectly seared steak alongside the creamy Parmesan mashed potatoes and crispy chips.
For an extra touch, drizzle any remaining butter from the steak pan over the mashed potatoes or steak.
