“Pecan Pie Cookies: Sweet Handheld Indulgence”

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt.
In a separate large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
Add the egg and vanilla extract, and continue beating until smooth.
Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Scoop the Cookie Dough:

Using a cookie scoop or tablespoon, drop rounded balls of dough (about 1 tablespoon each) onto the prepared baking sheet, spacing them about 2 inches apart.

In a small bowl, whisk together the brown sugar, corn syrup, melted butter, egg, vanilla extract, and salt until smooth.

Spread the filling gently to cover the top of the dough.
Bake:

Bake in the preheated oven for 12-15 minutes, or until the cookie edges are lightly golden and the filling is set.
Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
