Preheat your oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper and lightly grease it.
Make the Brownie Layer:
In a bowl, whisk together the melted butter, sugar, eggs, and vanilla until smooth.
Stir in cocoa powder, flour, and salt until just combined.
Spread the brownie batter evenly in the prepared pan.
Make the Cheesecake Layer:
In a separate bowl, beat the cream cheese, peanut butter, and sugar until creamy.
Add the egg and vanilla and mix until smooth.
Gently spread the cheesecake mixture over the brownie layer.
Add the Topping:
Sprinkle the chopped mini peanut butter cups evenly over the top.
Lightly press them into the cheesecake layer.
Bake & Cool:
Bake for 30–35 minutes, or until the center is set and the edges are golden.
Allow to cool completely in the pan, then chill in the fridge for at least 2 hours before slicing.
Serve & Enjoy:
Drizzle with melted chocolate or peanut butter if desired.
Slice into bars and serve chilled or at room temperature.
