Peach Cobbler Cinnabites: A Sweet and Flaky Dessert Delight

In a medium saucepan, combine the diced peaches, brown sugar, cinnamon, nutmeg (if using), and cornstarch. Stir everything together and cook over medium heat until the peaches soften and the mixture thickens, about 5-7 minutes. Remove from heat and set aside.
Prepare the Cinnamon Rolls:

Preheat the oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
Unroll the cinnamon rolls and flatten each one slightly with your fingers or a rolling pin to create a larger surface area.
Assemble the Cinnabites:

Place a spoonful of the peach filling in the center of each cinnamon roll. Fold the sides of the cinnamon roll around the peach filling to form a bite-sized bundle.
Arrange the filled cinnamon rolls into the muffin tin, with each cinnabite sitting snugly in a muffin cup.
Bake the Cinnabites:

Brush the tops of the cinnabites with melted butter and sprinkle with a mixture of sugar and cinnamon for a sweet, crunchy finish.
Bake for 12-15 minutes, or until the cinnamon rolls are golden brown and cooked through.
Top with Icing:

Once the cinnabites are out of the oven, drizzle the included icing over the top of each one while still warm for an extra sweet touch.
Serve and Enjoy:

Allow the cinnabites to cool for a few minutes before serving. These are best enjoyed warm, with the gooey peach filling and cinnamon roll goodness!
