Knead the dough on a lightly floured surface until it becomes smooth and elastic, about 5-7 minutes. If the dough is too sticky, add a bit more flour.
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to allow it to firm up.
Step 2: Prepare the Filling
While the dough is chilling, place the fruit preserves in a small saucepan. If you prefer a thicker filling, mix the cornstarch with a little water and add it to the preserves. Heat over low heat, stirring constantly, until the preserves are warmed through and slightly thickened. Set aside to cool.
Step 3: Roll and Assemble
Preheat the oven to 350°F (175°C).
Roll the chilled dough out on a floured surface into a rectangle, about 1/4-inch thick.
Spread the fruit preserves evenly across the dough, leaving about 1-inch borders on all sides.
Roll the dough up from one edge, like a jelly roll, to form a log.
Cut the log into approximately 1-inch pieces and arrange them on a greased or parchment-lined baking sheet.
Step 4: Bake
Bake the Pake in the preheated oven for about 15-20 minutes, or until the pastries are golden brown.
Remove from the oven and allow them to cool slightly before dusting with powdered sugar.
