Oven-Baked Salmon and Garden Veggie Medley


Preheat Oven: Preheat your oven to 180°C (360°F).

Season the Salmon: In a bowl, mix 3 tablespoons vegetable oil, lemon juice, fish seasoning, and black pepper. Rub the mixture over the salmon steaks and set aside to marinate while prepping the vegetables.

Prepare the Veggies: Slice the onion, carrot, potatoes, and bell pepper. Combine all vegetables in a large mixing bowl with broccoli and cherry tomatoes. Season with salt and a light drizzle of oil.

Assemble the Tray: On a parchment-lined baking tray or in a baking dish, arrange the vegetables evenly. Place the salmon steaks on top or nestled among the veggies.

Bake: Bake in the preheated oven for 60 minutes, or until the vegetables are tender and the salmon is cooked through.

Serve: Remove from the oven and serve hot with a lemon wedge on the side for an extra fresh kick.
