Orange Juice Cake: A Fresh and Zesty Citrus Delight

Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3-4 minutes.
Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
Add the orange juice, orange zest, and vanilla extract, and mix until combined.
Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the flour mixture. Stir until just combined; be careful not to overmix.
Bake the Cake:

Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Prepare the Orange Glaze:

In a small bowl, whisk together the powdered sugar, orange juice, and optional orange zest until smooth. Add more juice if you prefer a thinner glaze.
Once the cake is completely cooled, drizzle the glaze over the top of the cake, allowing it to drip down the sides.
Serve and Enjoy:

Slice the cake and serve. This cake pairs wonderfully with a cup of tea or coffee for an afternoon treat.
