Preheat your oven to 400°F (200°C).
Caramelize the onions:
In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for 20-25 minutes, until the onions are soft and caramelized. Season with salt and pepper to taste. Set aside.
Cook the bacon:
In the same skillet, add the chopped bacon and cook over medium heat until crispy. Remove from the skillet and drain on paper towels. Set aside.
Prepare the tart base:
Roll out the puff pastry sheet on a baking tray lined with parchment paper. Using a knife, score a border around the edges of the pastry (about 1 inch wide). This will create a raised edge when baked.
Assemble the tart:
Spread the caramelized onions evenly over the puff pastry, staying within the border. Sprinkle the crispy bacon on top, then crumble the goat cheese over the entire surface.
Bake the tart:
Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed.
Finish the tart:
Drizzle the tart with honey right after it comes out of the oven. Garnish with fresh thyme if desired.
Serve:
Allow the tart to cool for a few minutes before slicing. Serve warm and enjoy!
