Melt the Cheese:
Stir in shredded cheddar and grated Parmesan cheese, mixing until the cheese is fully melted and the sauce becomes creamy.
Add Tomatoes & Spinach:
Add the halved cherry tomatoes and spinach to the pot. Let them cook for 2 minutes, just until the spinach wilts and the tomatoes soften.
Return the Sausage & Serve:
Add the cooked sausage back into the pot, stirring everything together. Serve the pasta warm, garnished with additional Parmesan if desired.
