Oatmeal Spinach Pancakes with Mozzarella

In a large bowl, combine the oatmeal, chopped chives, spinach, shredded mozzarella, eggs, salt, garlic powder, and yogurt. Stir until all ingredients are well mixed. The consistency should be thick but spreadable. If the mixture is too thick, add a little water or more yogurt to adjust the texture.

2. Heat the Pan:
Heat a non-stick skillet or griddle over medium heat and brush with a little avocado oil to prevent sticking.

3. Cook the Pancakes:
Once the pan is hot, spoon the pancake mixture onto the skillet, forming small pancakes. Use the back of the spoon to spread each one into a round shape.

Cook each pancake for 2-3 minutes on one side, until golden brown and firm enough to flip. Flip the pancakes and cook for another 2 minutes, or until cooked through.

4. Add Mozzarella:
After flipping, sprinkle a little extra shredded mozzarella on top of each pancake and cover the skillet with a lid for about 1 minute. This will allow the mozzarella to melt into the pancakes.

5. Serve:
Once the pancakes are cooked and the cheese is melted, remove from the skillet. Serve hot, and enjoy these savory, cheesy pancakes!
