Northern Italian-style Potato Fritters:


Peel and grate the potatoes. Use a clean towel or cheesecloth to squeeze out any excess moisture to ensure the fritters remain crispy.

Mix the Ingredients:
In a large bowl, combine the grated potatoes, finely grated or chopped onion, egg, flour, salt, pepper, and garlic powder. Stir until everything is well incorporated into a thick batter.

Heat the Oil:
Heat oil in a frying pan over medium-high heat. You need enough oil to fry the fritters without them floating.

Form the Fritters:
Using a spoon, scoop a portion of the potato mixture and shape it into a small patty. Carefully place the patties into the hot oil.

Fry the Fritters:
Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy. Be sure to flip gently to avoid breaking.

Drain and Serve:
Remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

Enjoy:
Serve the fritters hot with your favorite dipping sauce, sour cream, or simply enjoy them on their own!
