Start by crushing the digestive biscuits or graham crackers into fine crumbs. You can do this by placing them in a food processor or by putting them in a zip-lock bag and crushing them with a rolling pin. Mix the crumbs with the melted butter until well combined. Press this mixture into the bottom of a tart pan, making sure it’s evenly spread and compacted. Place the crust in the fridge to chill while you prepare the filling.
Make the Filling:
In a large bowl, combine the Greek yogurt, softened cream cheese, heavy cream, powdered sugar, and vanilla extract. Use a whisk or electric mixer to beat everything together until smooth and creamy. Add the lemon juice and mix again to combine. For a firmer consistency, you can dissolve the gelatin in a little warm water and fold it into the filling mixture. This step is optional, but it helps the tart hold its shape better.
Assemble the Tart:
Pour the filling over the chilled crust, smoothing the top with a spatula. Place the tart in the refrigerator for at least 4 hours, or preferably overnight, to allow it to set properly.
Decorate and Serve:
Once the tart has set, carefully remove it from the tart pan. Decorate with fresh berries and a few mint leaves for a pop of color. Slice and serve chilled.
