Press into a Pan:
Line an 8×8-inch baking pan with parchment paper or lightly grease it. Press the oat mixture into the bottom of the pan, spreading it evenly and pressing down firmly.
Make the Chocolate Topping:
In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 20-second intervals, stirring after each, until the chocolate is melted and smooth.
Top the Oats with Chocolate:
Pour the melted chocolate over the oat mixture and spread it evenly with a spatula.
Chill:
Refrigerate the bars for at least 2 hours, or until the chocolate has set and the bars are firm enough to cut.
