Muffins with Spinach, Potatoes, and Ricotta

Peel and grate the potatoes. Use a clean towel or paper towel to remove any excess moisture from the grated potatoes.

Chop the spinach and onion into small pieces.

2️⃣ Mix the Ingredients:
In a large mixing bowl, combine the grated potatoes, chopped spinach, and chopped onion.

Add the ricotta cheese, corn starch, and eggs to the bowl. Mix well until everything is evenly combined.

Season the mixture with salt, paprika, Provence herbs, and pepper to taste.

3️⃣ Shape the Muffins:
Preheat your oven to 375°F (190°C). Grease a muffin tin with olive oil.

Spoon the mixture evenly into the muffin tin, filling each cup about three-quarters full.

4️⃣ Add the Mozzarella:
Sprinkle grated mozzarella on top of each muffin for a cheesy, golden finish.

5️⃣ Bake:
Bake in the preheated oven for about 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
