Cook the Ribeye Steak:
Preheat a cast-iron skillet over medium-high heat. Add olive oil and allow it to heat until shimmering.
Season the ribeye steaks generously with salt and pepper on both sides.
Place the steaks in the skillet and cook for about 4-5 minutes per side for medium-rare, or longer if you prefer your steak more done. Add minced garlic, butter, and rosemary or thyme (if using) during the last 2 minutes of cooking. Spoon the melted butter over the steaks while they finish cooking to enhance the flavor.
Remove the steaks from the skillet and let them rest for 5-10 minutes before serving.
Prepare the French Onions:
While the fries and steak are cooking, heat butter and olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for about 20-25 minutes until they are soft and golden brown.
Stir in the brown sugar and balsamic vinegar. Continue to cook for another 5 minutes, allowing the onions to caramelize and absorb the vinegar. Season with salt and pepper to taste.
Assemble the Dish:
Place the cooked ribeye steak on a plate, top with a generous portion of the caramelized French onions, and serve alongside the crispy French fries. Garnish with extra parsley or herbs if desired.
