Combine Dry Ingredients:
In a medium-sized bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
Mix Wet Ingredients:
In a separate large bowl, beat the eggs and sugar together until light and fluffy. Add the vegetable oil, applesauce, and vanilla extract, mixing until smooth.
Combine Wet and Dry Mixtures:
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
Add Apples and Milk:
Gently fold in the chopped apples and milk, making sure everything is evenly distributed.
Bake:
Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
Cool and Serve:
Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
