Mexican Taco Lasagna – A Fusion of Flavors in Every Layer!

Cook the Beef: Preheat the oven to 350°F (175°C). Spray a 9×9 baking dish with non-stick spray. In a large skillet, cook the ground beef over medium heat, crumbling it as it cooks. Once browned, drain any excess grease.
Prepare the Meat Mixture: Add the taco seasoning and water to the beef, cooking for 2 minutes to incorporate the seasoning. In a medium bowl, combine the Ro*Tel diced tomatoes with chiles, nacho cheese soup, and sour cream. Stir in the cooked meat mixture.
Assemble the Lasagna: Place 3 tortillas on the bottom of the prepared baking dish. Top with 1/3 of the meat mixture. Repeat the layers two more times, ending with a layer of tortillas on top. Sprinkle the grated cheddar cheese over the final layer.
Bake the Lasagna: Bake the lasagna in the preheated oven for 20 minutes, or until the cheese is melted and the dish is hot throughout.
Serve: Once baked, serve the lasagna topped with guacamole, fresh cilantro, and extra sour cream for an added burst of flavor!
