Mexican Caesar Dressing (Chopt Copycat): A Bold and Creamy Twist

Combine the base ingredients: In a medium bowl, whisk together the mayonnaise, sour cream, lime juice, and olive oil until smooth and creamy.
Add the flavorings: Stir in the Dijon mustard, grated Parmesan cheese, minced garlic, chipotle peppers (and a bit of the adobo sauce for extra flavor), and chopped cilantro.
Blend and adjust: Whisk until all ingredients are well combined. Taste the dressing and adjust seasoning with salt and pepper as needed. If you prefer a milder dressing, reduce the amount of chipotle peppers.
Serve or store: Pour the dressing over a fresh salad, or store it in an airtight container in the refrigerator for up to 4-5 days. Shake well before using if the dressing separates.
