Preheat your oven to 400°F (200°C).
Lay the bacon strips on a baking sheet lined with parchment paper. Bake in the oven for 15-20 minutes, or until crispy and golden brown.
Once done, remove the bacon from the oven and place it on a paper towel-lined plate to drain excess grease.
Cook the Eggs
In a non-stick skillet, melt 1 tablespoon of butter over medium heat.
Crack the eggs into the skillet and cook them sunny-side up or scrambled, depending on your preference. Season with salt and pepper.
Once the eggs are cooked to your liking, remove them from the skillet and set aside.
Toast the Croissants
Slice the croissants in half horizontally.
In the same skillet you used for the eggs, melt the remaining butter over medium heat.
Place the croissant halves cut-side down in the skillet and toast them until golden and crispy, about 2-3 minutes.
Assemble the Sandwich
Place one slice of cheddar cheese on the bottom half of each toasted croissant.
Layer with two slices of crispy bacon and then top with a cooked egg.
Add any optional toppings such as avocado, tomato, or spinach if desired.
Close the sandwich with the top half of the croissant.
Serve
Slice the sandwich in half and serve immediately, while the cheese is melty and the bacon is crispy.
