Set your oven to 375°F (190°C).
Make the Marinade:
In a bowl, combine the olive oil, Dijon mustard honey, minced garlic, lemon zest, salt, and oregano. Stir well to create a flavorful marinade.
Marinate the Chicken:
Place the chicken thighs in a large ziplock bag or shallow dish. Pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes to allow the flavors to meld.
Sear the Chicken:
In a large skillet, heat some olive oil over medium-high heat. Once hot, add the chicken thighs and sear each side for 3-4 minutes until they’re golden brown and tender.
Prepare for Baking:
Transfer the seared chicken thighs to a baking dish. Add water or chicken stock to the bottom of the dish to help keep the chicken moist while it bakes.
Bake the Chicken:
Cover the baking dish with tin foil and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Rest the Chicken:
Once out of the oven, let the chicken rest for a few minutes before slicing it. This allows the juices to redistribute for a juicy bite.
Assemble the Gyros:
Serve the herb-infused chicken on warm pita bread with your favorite gyro toppings such as fresh tomatoes, cucumber, red onion, and a generous spoonful of tzatziki sauce.
