Mediterranean Baked Fish with Tomatoes and Capers


Prepare the Oven and Baking Dish: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.

Season the Fish: Pat the fish fillets dry with paper towels and arrange them in the prepared baking dish. Season both sides of the fillets with salt and pepper.

Make the Marinade: In a small bowl, combine olive oil, minced garlic, oregano, paprika, lemon zest, and lemon juice. Mix well and drizzle the marinade evenly over the fish fillets.

Add Vegetables: Scatter the halved cherry tomatoes, sliced Kalamata olives, and red onion around the fish in the baking dish.

Bake the Fish: Bake in the preheated oven for 15–20 minutes, or until the fish is opaque and flakes easily with a fork.

Garnish and Serve: Sprinkle fresh parsley over the baked fish before serving. Serve hot with crusty bread, steamed rice, or roasted vegetables for a complete Mediterranean-inspired meal.
