Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, honey, Dijon mustard, minced garlic, apple cider vinegar, Worcestershire sauce, dried thyme, salt, and black pepper. This combination creates a perfect balance of sweet, tangy, and savory flavors.
Marinate the Pork Chops: Place the pork chops in a resealable plastic bag or shallow dish. Pour the marinade over the pork chops, making sure they are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or preferably overnight. The longer they marinate, the more flavor they absorb.
Cook the Pork Chops: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Remove the pork chops from the marinade (discard the marinade) and sear them in the skillet for 4-5 minutes on each side, until they’re golden brown and cooked through. The internal temperature should reach 145°F (63°C).
Serve: Remove the pork chops from the skillet and let them rest for a few minutes before serving. Garnish with freshly chopped parsley if desired.
