Preheat your oven to 375°F (190°C). Slice the zucchini into ¼-inch thick rounds and chop the tomatoes. Dice the onion and mince the garlic.
2. Cook the Bacon & Aromatics
In a skillet, cook bacon until crispy. Remove and set aside. In the same pan, sauté onion and garlic in a bit of olive oil until translucent, about 3–4 minutes.
3. Layer the Casserole
Lightly grease a baking dish. Layer half of the zucchini slices on the bottom. Top with half of the tomatoes, sautéed onion mixture, and bacon. Add a sprinkle of salt, pepper, and cheese. Repeat the layers once more.
4. Bake to Perfection
Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10–15 minutes until the top is bubbly and golden.
5. Serve Hot
Let the bake rest for 5 minutes before serving.
