Preheat your oven to 425°F (220°C).
Season the Steak:
In a small bowl, combine the chili powder, red pepper, cumin, marjoram, garlic powder, onion powder, and salt. Rub the spice mixture evenly over the sirloin steak.
Cook the Steak:
Heat a little oil in a frying pan over medium heat. Cook the steak until it reaches your desired level of doneness. Once cooked, let the steak rest for a few minutes, then slice it into thin pieces.
Assemble the Quesadillas:
Place 2 large tortillas on a lined baking sheet. Sprinkle 1/2 cup of shredded cheese over each tortilla.
Evenly distribute the sliced steak over the cheese. Top with black beans, fire-roasted corn, sliced tomatoes, and cubed avocado.
Bake the Quesadillas:
Place the baking sheet in the oven and bake for about 8-10 minutes or until the cheese is melted, and the tortillas are crispy and golden.
Garnish & Serve:
Remove from the oven, squeeze some fresh lemon juice over the top, and sprinkle with chopped coriander for an extra burst of flavor. Slice and enjoy!
