Loaded Cauliflower Casserole: A Healthy Twist on a Classic Favorite

Preheat your oven to 375°F (190°C).
Steam or boil the cauliflower florets until tender, about 8-10 minutes. Drain well and set aside.
Once the cauliflower is drained, gently pat it dry with a paper towel to remove any excess moisture.
Step 2: Make the Creamy Mixture
In a large bowl, combine the sour cream, cheddar cheese, Parmesan cheese, crumbled bacon, green onions, garlic powder, onion powder, salt, and pepper. Stir well to combine.
Step 3: Mix the Cauliflower with the Creamy Sauce
Add the cooked cauliflower to the cheesy mixture and gently fold to coat the cauliflower evenly.
Step 4: Assemble the Casserole
Transfer the cauliflower mixture into a greased 9×13-inch baking dish. Spread it out evenly.
Top the casserole with shredded mozzarella cheese.
Step 5: Bake
Place the casserole in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.
Step 6: Serve
Remove from the oven and let it cool for a few minutes before serving. Optionally, garnish with extra green onions or crumbled bacon for added flavor.
